Beef and potato hand pies

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • salt and pepper
  • 2 garlic cloves, minced
  • 1/2 lb ground beef
  • 1 tbsp paprika
  • 1 medium potato, diced
  • flour
  • 2 sheets frozen puff pastry, thawed

Step 1

Preheat oven to 400. In a large skillet, heat oil over medium high. Add onion, season with salt and pepper, cook until translucent, 5 minutes. Add garlic and cook until fragrant, 30 seconds. Add beef and cook until browned, 5 minutes. Stir in paprika and potato, season with salt and pepper. remove from heat.
On a floured surface, roll out puff pastry slightly. Cut each into 4 squares. Place 1/3 cup beef mix in center of each square. Brush edges lightly with water, fold over to form triangles, press to seal and sprinkle with paprika. Transfer to parchment lined baking sheet and bake until golden, 20-25 minutes. Let cool 5-10 minutes.
