Curried Egg Pinwheels

A classic rolled sandwich usually with a gherkin in the middle. We've used cucumber instead to give a balance to the curry, but if you prefer the traditional, go with the gherkin. Cut cucumber batons or "strips" from an English cucumber. Supermarkets with in-store bakeries will slice bread horizontally for you.

Ingredients

  • 12 hard boiled eggs, grated
  • 1/4 cup (50 mL) mayonnaise
  • 1/4 cup (50 mL) yogurt
  • 1 tbsp (15 mL) mango chutney
  • 1 tbsp (15 mL) curry powder or curry paste
  • 2 tbsp (25 mL) chopped coriander
  • 1/2 cup (125 mL) finely chopped celery
  • 1/4 cup (50 mL) finely chopped red onion
  • Salt and freshly ground pepper
  • 1/4 cup (50 mL) unsalted butter, room temperature
  • 1 loaf horizontally sliced white and/or brown bread
  • 12 cucumber batons

Preparation

Step 1

1. Combine grated egg, mayonnaise, yogurt, mango chutney, curry powder, coriander, celery and red onion. Alternatively, process in food processor. Season with salt and pepper.

2. Spread a light coating of soft butter on each slice. Spread a scant ½ cup (125 mL) filling evenly on each slice of bread. Cut off crusts. Place cucumber across short end. Roll into a cylinder.

3. Wrap each roll tightly in plastic wrap and refrigerate for at least 8 hours. Slice each roll into 4 or 5 sandwiches.

Tips
Use any bread that you prefer, but heavier breads can detract from the filling. For pinwheels, bread sliced lengthways makes a better pinwheel. Supermarkets with in-store bakeries are the best place to cut the bread horizontally. If they can't cut it for you, then make the pinwheels on regular bread slices - it's not quite as effective but still good. Don't buy really good bread: you need the elasticity of mass-produced bread to be able to roll the sandwiches! They will keep well for 24 hours wrapped in plastic wrap and refrigerated. Make sure there is enough filling in the sandwiches. Skimpy sandwiches don't have a flavour impact.
