Ingredients
- 24 oz whole milk
- 8 egg yolks
- 1 c sugar
- 1 vanilla bean sliced open to extract beans
- 4 0z cold milk

Preparation
Step 1
Bring milk to a boil. Beat egg yolks, sugar and vanilla together. Beat hot milk into yolk mixture while stirring yolk mixture. Retuen mixture to the stove. Constantly stirring with a plastic spatula, cook custard until the mixtue coats the spatual. Immediately add the cold milk. Strain through a fine sieve. Add to a cold water bath. Regrigerate.
