CRACKER PUDDING - AUNT MINNIE'S

This fabulous and tastey recipe comes from Brenda Grubb. It is the recipe of her husband's Aunt Minnie. The Grubbs had us out for dinner one Easter and served this.

Ingredients
- 1 quart of milk
- 1 egg
- 1/2 cup coconut
- 1 cup crushed Saltine Crackers (about 23)
- 4 TBS. sugar
- 1 tsp. vanilla
- Coconut for garnish
- red food coloring for fun
Preparation
Step 1
Heat milk. Add egg and crackers. Stir (while on heat) constantly until mixture thickens. Add sugar and vanilla. Cook until it boils and thickens more. Remove from heat and add coconut. Add a little red food coloring to make it pink, just for fun.
