California Gazpacho

Ingredients

  • 1 clove minced garlic
  • 3 lbs. tomatoes, peeled & chopped
  • 2 cucumbers, peeled, seeded & diced
  • 1/2 C minced green pepper
  • 1 minced jalapeno
  • 1/2 C minced onion
  • 2 C V-8 juice
  • 1/3 C olive oil
  • 3 T vinegar
  • Salt & pepper
  • 1/4 t hot pepper sauce

Preparation

Step 1

In large bowl mix tomatoes with garlic. Add cucumber, peppers & onion. Mix in V-8 juice. Add olive oil, vinegar & seasonings. Cover & chill thoroughly. Serve with small croutons if desired.
