  • 6 cups chopped kale leaves
  • 1 cup chopped green apple
  • 1/4 cup pomegranate arils
  • 1/2 oz. (about 24) pistachios, chopped
  • Dressing
  • 2 tbsp. pomegranate juice
  • 1 tbsp. extra-virgin olive oil or grapeseed oil
  • 1 tsp. cider vinegar
  • 1/4 tsp. minced garlic
  • 1/8 tsp. salt
  • Dash black pepper

Step 1

Combine all salad ingredients in a large bowl.

In a medium bowl, whisk dressing ingredients.

Add dressing to salad, and toss to coat. Cover and refrigerate for 1 hour.
