- Salad
- 6 cups chopped kale leaves
- 1 cup chopped green apple
- 1/4 cup pomegranate arils
- 1/2 oz. (about 24) pistachios, chopped
- Dressing
- 2 tbsp. pomegranate juice
- 1 tbsp. extra-virgin olive oil or grapeseed oil
- 1 tsp. cider vinegar
- 1/4 tsp. minced garlic
- 1/8 tsp. salt
- Dash black pepper

Step 1
Combine all salad ingredients in a large bowl.
In a medium bowl, whisk dressing ingredients.
Add dressing to salad, and toss to coat. Cover and refrigerate for 1 hour.
