Potato Casserole

Always a favorite. Make this in a 9 X 13 pan or (2) 8 X 8 pans and freeze one. If freezing add topping when preparing for baking.

Ingredients
- Casserole
- 1 stick butter
- 1/2 C. onion, diced
- 1 Tbsp. salt
- 2 C. sharp cheddar cheese, grated (*)
- 1 pint sour cream
- 2 lbs. hash browns
- 1 can cream of celery soup
- 1 tsp. pepper
- (*) may substitute Velveeta cheese, chunked or Pepper Jack cheese for a variation
- Topping
- 1/4 stick butter, melted
- 2 C. crushed corn flakes (6 Cups whole=2 Cups crushed)

Cooking time 45mins
Preparation
Step 1
Casserole
Heat oven to 350 degrees.
Thaw frozen hash browns.
Melt butter and mix with potatoes.
Saute onions in butter.
Mix all together.
Pour into casserole pan(s).
Topping
Sprinkle corn flakes on top. Pour melted butter over flakes.
Bake at 350 degrees for 45 minutes
