Roasted Broccoli & White Bean Salad

Ingredients

  • 1 large head broccoli
  • 3 oz. olive oil
  • Salt & pepper
  • 1 T minced garlic
  • 1 t thyme
  • 2 T minced shallots
  • 2 oz. sherry vinegar
  • 4 oz. olive oil
  • 1 small can white beans, drained & rinsed
  • 1 C chopped tomatoes

Preparation

Step 1

Preheat oven to 350. Cut broccoli into small florets. Peel & cut stems into small pieces. Toss with olive oil, salt & pepper. Place on cookie sheet & toast 6-8 min, til crispy on edges
While borccoli cooks & cools, make dressing. Mix herbs, vinegar & pinch of salt & pepper. Slowly whisk in olive oil til mixed well.
Mix broccoli, beans, tomatoes & dressing. Season to taste.

Serving size: 7 1/2 oz. 380 cal.
