Sherry Vinaigrette

Ingredients

  • 1 Tbsp dijon mustard
  • 1/4 cup sherry wine vinegar
  • 1/4 tsp salt
  • fresh ground black pepper, to taste
  • 1 1/2 cups olive oil

Preparation

Step 1

1. Whisk the mustard and the sherry vinegar together in a small bowl.

2. Stir in the salt and black pepper to taste.

3. Whisking constantly, drizzle the olive oil into the vinegar mixture in a slow, steady stream.

4. Taste, correct seasoning and reserve, covered, until ready to use.
