Ingredients

  • 4 cups short grain rice
  • Awase-zu
  • 1 cup Japanese vinegar or Heinz white vinegar
  • (3/4 cups sugar for Japanese vinegar - 1 cup for Heinz)
  • 1 - 2 Tbs salt

Preparation

Step 1

Wash rice well. cook rice. Putrice into a large pan or bowl; fold in awase-zu.


Awase-zu:
Heat ingredients until salt and sugar are dissolved.
Cool and pour half of the awase-zu on the hot rice.
Fold awase-zu gently into rice, being careful not to mash rice.
Slowly add remaining zu to taste.
