Broccoli Casserol

Ingredients

  • Broccoli Crowns partially cooked
  • 1 can Cream soup - I use celery but you can use mushroom or chicken
  • 1/2 cup mayo
  • 1 cup milk
  • 1 can Old English Cheddar Cheese
  • 1 Egg (I do not use)
  • 1/2 onion sliced thin
  • 1 1/2 About 1 1/2 cups juliened carrots
  • Italian Bread Crumbs

Preparation

Step 1

Spray a 13X9 casserole dish w/cooking spray.
Break broccoli into bite size pieces & microwave 2-3 minutes and place in pan.
Sauté carrots & onions until softened and place on top of broccoli.
Heat milk, soup & mayo and top vegetables.
Heat jar of cheese in microwave (remove top) or in pan of water until liquid.
Pour over vegetable mix and top w/seasoned bread crumbs. Dot w/butter and bake 350° until bubbly. I put under broiler for a few minutes to brown the top.
