Ingredients

  • 16 ounces packaged dried plain and/or spinach-flavored angel hair pasta or spaghetti
  • 1/4 cup olive oil
  • 1 medium onion, cut into thin wedges
  • 4 cloves garlic, minced
  • 10 roma tomatoes, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red pepper
  • 8 ounces tiny fresh mozzarella balls
  • 1/2 cup shredded fresh basil
  • finely shredded parmesan cheese

Step 1

In a large pot cook pasta according to package directions; drain. Return pasta to pot; keep warm.

Meanwhile, in a very large skillet heat oil over medium heat. Add onion and garlic. Cook and stir about 4 minutes or until onion is tender. Stir in tomatoes, salt, and crushed red pepper. Cook and stir for 2 to 3 minutes or until tomatoes soften.

Add tomato mixture to pasta; toss to coat. Add mozzarella cheese and basil; toss to coat.
