Mint Chocolate Cookies

  • 2 oz. unsweetened chocolate
  • 1/4 cup oil
  • 1 cup sugar
  • 1/2 tsp. mint extract
  • 2 eggs
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup powdered sugar

Step 1

Melt chocolate in a double boiler. Beat in oil, sugar and mint. One at a time add the eggs. Beat well. Stir in flour, baking powder, and salt. Cover dough and chill for at least four hours.

Drop by teaspoon into the powdered sugar. Roll until completely coated. Place on a greased baking sheet. Bake for 10-12 minutes at 350 F. Cool slightly on the pan before transferring to a cooling rack.
