Ingredients

  • 1/2 cup (1 stick) vegan butter, softened (can use regular)
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 3 tblsp. cocoa powder
  • 1 tsp. salt
  • 1/2 cup all-purpose flour
  • 1/2 cup milk chocolate chips
  • Cooking spray

Step 1

Preheat the oven to 350 degrees.
Cream the butter and sugar together using an electric mixer until light and fluffy - about 3 minutes. With the mixer on low speed, add the eggs and vanilla and mix until well blended. Stir the cocoa powder, salt, and flour into the egg and butter mixture until everything is well combined.
Pour mixture into a 8" pie plate that has been lighly coated with cooking spray.
Bake for 25-35 minutes or until the center of the pie is set.
Remove from the oven & sprinkle with the chocolate chips (milk or semi sweet) and allow to cool for 10 minutes before serving.
