Hummus bi tahini & cumin - (Silver Palate)

This twist on middle eastern hummus includes cumin, which gives it a great taste. Another great addition that I came up with is 1/2 cup chopped dry cured olives (or to taste). The cumin/olive combo is awesome. The original recipe is from The Silver Palate shop, from Manhattan, in the 70's
Ingredients
- 4 cups garbanzo beans, drained
- 1/2 cup tahini
- 1/3 cup warm water
- 1/3 cup best quality olive oil
- juice of 2-3 lemons
- 4 or more garlic cloves
- 1 1/2 tsp salt
- 2 tsp ground cumin
- fresh ground pepper to taste
- 1/2-1 cup dry cured olives, chopped (not original to Silver Palate recipe, but a great add)
Preparation
Step 1
1. combine chick peas, tahini, warm water, olive oil and juice of 1 lemon in the bowl of a food processor fitted with a steel blade. Process until smooth and creamy, pausing once or twice to scrape down sides of the bowl with a spatula.
2. Add garlic, salt, cumin and pepper to taste. *Add chopped olives, if using. Process to blend. Taste and correct seasoning if necessary. Add more lemon juice to taste. Scrape into a storage container, cover and refrigerate until ready to use.
Makes 1 quart.
