A riff on limoncello made with limes, grapefruits, and cachaça.

Ingredients

  • 1 L cachaça
  • 4 limes
  • 2 grapefruit
  • 3.5 c. sugar
  • 4.5 c. water

Preparation

Step 1

1. Fill a bowl with a mix of 1 part vinegar (white or apple cider) to 3 parts water. Put the citrus fruits in there and let soak for 20 - 30 minutes. This is to remove wax and pesticide. Then rinse the fruits in cold water.
2. Zest the limes and grapefruit, trying to avoid as much pith as possible.
3. Put zest and cachaça in a large enough container. Let sit covered for two weeks in room temperature.
4. In a saucepan, bring the sugar and water to a boil and stir until the sugar is completely dissolved. Allow the syrup to cool.
5. Strain the solids out of the cachaça, and stir in the cooled syrup. Age in a cool, dark place for 3 months.
6. Store in a freezer after the aging is complete.
