Ingredients
- Dressing:
- 1 10-ounce package washed, ready-to-eat fresh spinach
- 2-3 large ripe Bartlett or Bosc pears, cored and sliced
- 1 avocado, peeled and diced
- 3-4 bacon slices, cooked crisp and crumbled
- 1/2 cup pine nuts or other nut, toasted
- 1/2 cup dried cranberries
- 1/4 cup sliced fresh mushrooms (optional)
- 1/3 cup olive oil
- 2 tablespoons seasoned rice vinegar
- 1 garlic clove, crushed
- 1/4 teaspoon salt
- 1-2 teaspoons Dijon mustard
Preparation
Step 1
Combine spinach, pears, avocado, bacon, pine nuts, dried cranberries and mushrooms in a salad bowl.
To make the dressing, combine all ingredients in a small bowl and whisk until well blended.
Drizzle dressing over the salad and toss to coat. Makes 6 servings.
