Simple Salmon

Ingredients

  • 2 lb. Salmon Filet with skin on.
  • 1 large fresh orange.

Preparation

Step 1

Make a shallow pan big enough to hold the filet from heavy aluminum foil.
Place the filet skin side down on the foil. Do not use any cooking spray or oil!
Slice the orange about 1/4" thick and cover the filet with the slices. Overlap a bit for full coverage.

For the Oven:

Preheat to 300 degrees.
Place the foil pan flat on a cookie sheet and bake until the salmon is tender and milky white under the orange slices.

For the Grill:

Place the foil pan directly on the grill and cook with medium heat until milky white as above.

To serve:

Remove from heat and place the pan on a flat heat-proof surface like a cutting board. Remove and discard the orange slices.
Fold down the side of your aluminum pan, and holding one end of the foil, slide a sharp knife under the flesh of the fish moving slowly the full length of the filet. The skin will separate cleanly and stick to the foil.
Cut and serve the fish, throw away the foil!
