Ingredients

    (8 oz.) box manicotti shells (14 shells)

  • 8

    plus 4 oz. shreeded mozzarella cheese

  • 4

    plus 4 oz. shredded Parmesan cheese

  • 1

    (10 oz.) box frozen spinach, thawed and drained

  • 4

    large garlic cloves, minced

  • 2

    small, or 1 large eggs

  • 1

    pound ricotta cheese

  • 1

    teaspoon dried basil

  • 1

    (26 oz.) jar speghetti sauce with basil

  • 1

    (4 oz.) can chopped black olives

Directions

Cook the pasta according to the package instructions, drain, and rinse. Preheat the oven to 350. In a medium mixing bowl, combine 8 oz. of the mozzerella cheese, 4 oz. of the Parmesan cheese, the spinach, garlic, eggs, rocotta cheese, organo, and basil. Mix well. Lightly side-by-side in the baking dish. Spoon the speghetti sauce evenly over the shells. Sprinkle the black olives and the remaining 4 oz. mozzarella and 4 oz. Parmesan cheeses ove the sauce. Bake for 50 min.
