Salmon Loaf

Ingredients

  • 1 large can salmon
  • 1/2 cup chopped celery
  • 1/4 cup finely chopped onion
  • 1 1/2 cups soft bread crumbs
  • 1 teaspoon dry mustard
  • 1/2 cup milk
  • 2 eggs
  • 4 tablespoons lemon juice
  • Salt and pepper to taste
  • 3 tablespoons chopped parsley

Preparation

Step 1

Flake salmon and crush bone. Beat eggs with milk. Combine remaining ingredients. Add egg-milk mixture; spoon into greased (8 1/2 x 4 1/2 inch) loaf pan. Bake in moderated oven, 350⁰F for 1 hour. Serve hot or cold; slices well.
