Ingredients
- 1/2 c. olive oil
- 2 T. red wine vinegar
- 1 t. sugar
- 2 garlic cloves, minced fine
- 1 t. dried oregano
- 1 T. chopped fresh dill
- salt and pepper
- 3/4 c. feta cheese,crumbled
- 1/2 c. buttermilk (or milk, but buttermilk is best)
Preparation
Step 1
In a blender or food processor, whirl all the ingredients except the buttermilk for one minute.
With the blender running, slowly pour in the buttermilk and blend until think and creamy (turn off the blender as soon as the dressing thickens or it may curdle)
Chill at least one hour so the flavors meld
Makes 2. cups and stays fresh for 3-4 days.
If the dressing separates, whirl in the blender again.
