Corn and Ham Soup

  • 2 tbsp butter
  • 26 oz defrosted frozen corn
  • 1 onion chopped
  • 3 cup milk
  • 1 cup diced ham
  • 1 red pepper diced small
  • 1/4 cup fresh chives chopped
  • salt and pepper



Step 1

melt 1/2 the butter and saute corn and onion 5 minutes. Add milk,season and bring to a boil. Reduce heat to medium-low,cover and simmer 12 minutes. Strain out and reserve 1 cup corn. Puree the rest.
heat remaining butter, add ham and red pepper and cook 5 minutes. Add the reserved corn and chives. Spoon topping in center of bowls of soup.
