Lumberman's Omelet

Ingredients

  • One 3-egg omelet
  • 1 cup cooked potatoes, cubed
  • 3 strips bacon, cut in small pieces
  • 2 green onions, chopped
  • salt & pepper

Preparation

Step 1

Fry bacon pieces in small frying pan (not the omelet pan). Remove to a paper towel with a slotted spoon. Drain all but 1 Tablespoon of the drippings.

Brown potatoes in reserved bacon drippings, adding salt and pepper to taste.

Make a 3-egg omelet. Cover half the omelet with bacon, potatoes, and onions. Flip remaining half over the filled half.
