Zucchini "Pasta"

Ingredients

  • 1 med/lg zucchini per person
  • pesto
  • salt

Preparation

Step 1

Use the julienne attachment on a mandoline to slice zucchini into noodles

Boil salted water

Add zucchini “noodles” to the boiling water to cook for about 1 minute

Remove from water and blanch immediately to prevent overcooking

Toss with pesto (or tomato sauce, or alfredo sauce)
