Asian Lettuce Cups

Ingredients
- 2 tsp peanut oil, divided
- 1 lb lean ground pork
- 1 clove garlic, minced
- 1 red bell pepper, thinly sliced
- 4 oz shiitake mushrooms, trimmed, thinly sliced
- 2 Tbsp low-sodium soy sauce
- 2 Tbsp Asian chili paste
- 4 scallions, thinly sliced
- 1 c cooked brown rice
- 12 leaves Bibb lettuce (1–2 large heads)
- 1/4 c chopped fresh cilantro

Preparation
Step 1
1. HEAT 1 teaspoon of the oil over medium heat in a large nonstick skillet. Cook the pork for 5 minutes, stirring often, or until browned and cooked through. Add the remaining oil, garlic, pepper, and mushrooms and cook for 5 minutes, stirring often. Stir in the soy sauce, chili paste, scallions, and brown rice and cook for 2 minutes or until heated through.
2. ARRANGE the lettuce leaves on a serving platter. Fill the leaves with the pork mixture evenly. Sprinkle with cilantro leaves.
