Ingredients

  • 1 tsp veggie oil
  • 2 cups grated Colby and Monterey Jack Cheese
  • 10 frozed hash brown patties, thawed
  • 8 oz cream cheese, softened
  • 12 eggs
  • 1/2 tsp pepper
  • 8 oz diced deli ham
  • 4-5 green onions
  • 3 plum tomatoes

Step 1

Preheat oven to 450.

Crumble hash browns over baking sheet (with sides). Press into even layer. Sprinkle with half of the cheese and Bake for 13-15 mins.

Whisk cream cheese until smooth. add eggs and pepper and whisk.

Cook diced ham and onions over medium heat 2-3 minutes. Stir ham mixture into egg mixture.

Pour egg mixture over potato crust. Return to oven and bake for 6-8 mins.

Top with sliced tomatoes and remaining cheese and sprinkle eith more pepper.

Cut into squares and serve.


Can substitute bacon or sausage for deli ham.
