Wine Cherry Compote Sauce

Although Chukar Cherries products taste outstanding when eaten right out of the package, try this heavenly recipe to bring out even more of the superb cherry flavor. Excellent with just about any dessert, this compote sauce highlights the best in Central Washington fruit - from the tart sweetness of the Bing cherries to the rich smoothness of wine grapes. It's simple to make too!

Ingredients

  • 4 ounces Chukar Dried Bing Cherries
  • 1 cup Columbia Valley Merlot or Cabernet wine
  • 1/4 cup sugar
  • 2 strips lemon peel
  • 1 tbsp lemon juice
  • 1 cinnamon stick

Preparation

Step 1

Combine all ingredients in a medium saucepan and bring mixture to a boil.

Reduce heat, cover, and simmer until the dried cherries are soft and plump (about 25 minutes).

Next, remove sauce from heat until it is cool. Once the sauce has reached room temperature, cover and chill for at least one hour.

The compote is good for up to one week, as long as it is kept refrigerated. Serve over dessert in sherbet dishes or glass bowls.
