Cheese Tortellini Salad

Ingredients
- 1 9 oz pkg cheese tortellini ( I like tricolored)
- 1 1/2 cups broccoli florets -- chopped
- 1/4 cup fresh parsley -- chopped
- 1 1/2 tablespoons chopped pimento
- 1 6 oz jar marinated artichoke hearts -- (reserve liquid)
- 3 green onions -- chopped
- 1/4 teaspoon basil
- 1/2 cup of your favorite cheese & garlic salad dressing or Italian dressing
- 10 cherry tomatoes -- halved
- 1/4 - 1/2 cup grated parmesan cheese
- 1 4 oz. can black olives -- sliced

Preparation
Step 1
Cook & drain tortellini per package directions and let cool.
Fold into tortellini all ingredients except the last 3 also using the reserved artichoke marinade.
Refrigerate 3 hours or overnight.
Just before serving add the last 3 ingredients.

NOTES : Can easily be doubled & keeps pretty well in the refrigerator.
I also use more artichoke hearts because we like them.
The dressing that OK123 uses is Cardini's Zesty Garlic & then she uses a little more parmesan cheese. I couldn't find that dressing here, so I used a Roasted Garlic Vinaigrette which worked wonderfully. This is very flexible & you can adjust amounts or products to your individual tastes.
