Ingredients

  • 1

    9 oz pkg cheese tortellini ( I like tricolored)

  • 1 1/2

    cups broccoli florets -- chopped

  • 1/4

    cup fresh parsley -- chopped

  • 1 1/2

    tablespoons chopped pimento

  • 1

    6 oz jar marinated artichoke hearts -- (reserve liquid)

  • 3

    green onions -- chopped

  • 1/4

    teaspoon basil

  • 1/2

    cup of your favorite cheese & garlic salad dressing or Italian dressing

  • 10

    cherry tomatoes -- halved

  • 1/4 - 1/2

    cup grated parmesan cheese

  • 1

    4 oz. can black olives -- sliced

Directions

Cook & drain tortellini per package directions and let cool. Fold into tortellini all ingredients except the last 3 also using the reserved artichoke marinade. Refrigerate 3 hours or overnight. Just before serving add the last 3 ingredients. - - - - - - - - - - - - - - - - - - NOTES : Can easily be doubled & keeps pretty well in the refrigerator. I also use more artichoke hearts because we like them. The dressing that OK123 uses is Cardini's Zesty Garlic & then she uses a little more parmesan cheese. I couldn't find that dressing here, so I used a Roasted Garlic Vinaigrette which worked wonderfully. This is very flexible & you can adjust amounts or products to your individual tastes.
