Prawn and Mixed Tomato Panzanella

Ingredients

  • 250 g thickly slices olive bread
  • olive oil spray
  • 2 garlic cloves, crushed
  • 12 green prawns, peeled, leaving tails intact, deveined
  • 200 g red grape tomatoes, halved
  • 200 g yellow cherry tomatoes, halved
  • 1 small red capsicum, seeded, coarsley chopped
  • 1/2 small red onion, cut into thin wedges
  • 2 tbs fresh lemon thyme sprigs
  • 1/4 cup fresh continental parsely leaves
  • 2 tbs olive oil
  • 1 tbs balsamic vinegar

Preparation

Step 1

1. Pre heat grill on high. Spray both sides of bread with oil. Spread with garlic. Cook under grill for 1-2 minutes each side or until golden. Tear into bite sized pieces and set aside.
2. Heat non stick frying pan over high heat. Spray with oil. Cook prawns for 2-3 minutes each side or until they curl and change colour. season to taste.
3. Combine tomato, capsicum, onion and bread in a large bowl. Add prawns, lemon thyme and parsley. Toss to combine.
4. Whisk oil and vinegar in a small bowl. Season to taste and toss to combine.
