- 4 chickens - parts
- 1 head of garlic peeled and finely pureed
- 1/2 cup dried oregano
- coarse salt and freshly ground pepper
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1 cup pitted prunes
- 1/2 cup pitted spanish green olives
- 1/2 cup capers with juice
- bay leaves
- 1 cup brown sugar
- 1 cup white wine
- 1/2 cup italian parsley or fresh

Step 1
in a large bowl combine chicken, garlic oregano, pepper and salt to taste, vinegar, olive oil, prunes,olives, capers, with juice and bay leaves. cover and marinate overnite.
preheat over to 350
arrange chicken in single layer in 1 or 2 shallow baking pans and spoon marinade over evenly. sprinkle chicken pieces with brown sugar and pour white wine over chicken.
bake 50 minutes - 1 hour basting frequently with juices. chicken is done with thigh pieces are clear
