Ingredients
- Optional:
- 1 lb soy crumbles
- 1 large-medium onion; chopped fine
- 1 small-medium green pepper; chopped fine
- 1 small can of tomato sauce
- 4 cloves of garlic; crush or dice fine
- 1 tsp oregano
- 1/2 - 1 tsp salt and pepper (to taste)
- Olive oil; enough to coat bottom of pan
- 2 small potatoes; peeled and diced
- 10-12 green olives; sliced in half or diced
- capers
- raisins
- 1/2 cup stock
- cumin or chili pepper according to taste
Preparation
Step 1
1. Saute garlic, onions and green pepper over medium to low heat until soft.
2. Mix dry spices and soy crumbles together in bowl and add to pan with tomato sauce. Cover and cook for approximately 15 minutes (add stock if desired).
3. If using potatoes add to mixture, cover and cook another 15 minutes or until potatoes are done.
4. If using olives or capers and/or raisins add to mixture and cook another 5 minutes until raisins plump up.
5. Serve warm with rice and black beans.
