Chicken or Hamburger Enchiladas

Ingredients

  • 2 large chicken breast or 1 LB of Hamburger
  • 1 cup of chopped onions
  • 1 clove garlic minced
  • 2 Tablespoons of butter
  • 1 (16oz) can tomato sauce
  • 1 (8oz) can diced tomato
  • 1/4 cup chopped green Chile
  • 1 teaspoon of sugar
  • 1 teaspoon ground
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of Basil
  • 12 frozen tortillas thawed
  • 21/2 cup shredded monterey jack cheese
  • 3/4 cup sour cream

Preparation

Step 1

In saucepan simmer chicken breast in water & cover 15 -20 minutes or until tender. Drain and carefully remove skin and bones. Sprinkle Chicken with a little salt. Cut into 12 strips and set aside. In saucepan cook onion & garlic in butter until tender. Add tomato's, tomato sauce Chilies, sugar, cumin, salt, oregano, & basil. Bring to boil & reduce heat & simmer. Cover for 20 Minutes. Remove form heat. Dip each Tortillas in tomato mixture to soften. Place 0ne piece of chicken and about two Tablespoon of shredded cheese on each tortillas. Roll up and place seam sides down in 13 x 9 pan. Blend sour cream in remaining sauce mixture. Pour over tortillas and sprinkle with remaining cheese. Cover bake 350 degrees for about 40 minutes or until heated through.
