Ingredients

  • 3 eggs
  • 3/4 cup oil
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups zucchini, skinned & grated
  • 3 cups sifted all purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 Tablespoon baking soda
  • 1 teaspoon baking powder
  • 1 cup nuts, chopped
  • 1 cup raisins

Preparation

Step 1

Grease & Flour 2 loaf pans.
Preheat oven to 350 degrees
Beat eggs until light & frothy.
Add oil, sugar, vanilla & zucchini.
Sift dry ingredients & add to above mixture.
Add nuts & raisins & mix well.


Pour into loaf pans and bake 350 degrees for 1 hour. Test for doneness.

Cool slightly before removing from pans.
