Quick Green Chicken Curry

Ingredients

  • 1 Tbsp. vegetable oil
  • 6 scallions, sliced
  • 1 1/2 lbs. boneless, skinless chicken breasts
  • 1 cup coconut cream
  • 1/2 cup chicken broth
  • 3 Tbsp. Thai green curry paste
  • 3 Tbsp. chopped cilantro
  • Cooked noodles or rice, to serve

Preparation

Step 1

Cut the chicken into cubes.

Heat the oil in a large skillet. Add the scallions and chicken and cook, stirring, for 3-4 minutes, or until the chicken is browned.

Stir in the coconut cream, chicken broth and the curry paste and cook for another 5 minutes, or until the chicken is cooked through.

Stir in the chopped cilantro and serve over rice or noodles.
