Pork: Tuscan Roast Marinade

Ingredients

  • 6 cloves of garlic chopped
  • 1/3 cup chopped rosemary
  • 2 tablespoons lemon zest
  • 2 teaspoons fennel seeds
  • 1 tablespoons salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 tablespoons dijon mustard
  • 2 to 3 pound pork roast

Preparation

Step 1

Mix all the ingredients together and place over a pork roast that has been let out of the fridge for about an hour. Roast until internal temperature reaches about 140.

Let rest for 20 minutes.
