Ingredients
- 2 - 15 oz. cans pumpkin pure
- 1 1/4 cups maple syrup
- 1/2 cup apple juice
- 2 Tbsp. lemon juice
- 1 tea. ground ginger
- 1/2 ta. cinnamon
- 1/2 t3a. nutmeg
- 1/4 tea. salt

Step 1
In a 5 qt. heavy pot, combine pumpkin, maple syrup, apple juice, lemon juice, ginger, cinnamon, nutmeg, and salt. Bring to boiling; reduce heat. Simmer, uncovered, about 25 minutes or until thickened, stirring often. (If mixture spatters, reduce heat more).
Ladle hot pumpkin butter into sterilized half-pint jars, leaving 1/2" headspace. Process in boiling water bath 10 minutes.
Makes about 4 half-pints
