Parmesan chicken & Crispy Potato Wedges

Ingredients

  • 3 med. baking potatoes
  • 1 med. sweet potato
  • 2 T olive oil
  • 1 T Parmesan cheese
  • 1 t paprika
  • 3/4 t garlic salt
  • 1/2 t dried thyme
  • Salt & pepper
  • Checken breasts
  • 1 beaten egg
  • 1/2 C Parmesan cheese
  • 3 T flour
  • 3/4 t dried thyme
  • Dash pepper
  • 2 t olive oil
  • 1 lb. broccoli

Preparation

Step 1

Cut each potato lengthwise into 8 wedges. On ungreased baking pan arrange wedges in single layer, skin side down. In small bowl combine 2 T oil, 1 T Parmesan, paprika, garlic salt, thyme & 1/4 t pepper. Brush mixture onto wedges. Set aside
In shallow bowl combine egg & 2 T water. In another shallow bowl combine 1/3 C Parmesan, flour, thyme & dash of pepper. Dip chicken into egg mixture; coat with cheeze. Arrange in ungreased baking pan ( 13x9x2) Drizzle with remaining 2 T olive oil
Bake chicken & potato wedges, uncovered, in 375 oven 45-55 min.
Meanwhile cook broccoli.
