Herbed Roasted Fingerlings with Scallions
Ingredients
- 2 lbs fingerling potatoes, halved lengthwise
- 1 head of garlic, cloves peeled
- 2 C olive oil
- Kosher salt & ground pepper
- 12 Thyme sprigs
- 8 rosemary sprigs
- 1 bunch of scallions, thinly sliced

Step 1
Heat oven to 375. In large roasting pan, toss potatoes, garlic cloves & olive oil; season with salt & pepper. Using kitchen string, tie thyme & rosemary sprigs into a bundle & add to pan. Roast potatoes for 40 min. or til tender & just beginning to brown. Let cool slightly. Drain potatoes & garlic, reserving oil; discard herb bundle.
Set the garlic cloves aside. Return potatoes to pan, cut side down & drizzle with 2 T of reserved oil. Roast for 15 min longer, til golden & crisp. Add scallions & roast for 1 min. add reserved garlic cloves & toss. Serve.
