Strawberry Delight Squares

Ingredients

  • 1 1/2 cups Honey maid honey grahams finely crushed (about 20 squares)
  • 1/2 cups sugar, divided
  • 6 Tbsp. melted butter or margarine
  • 1 1/2 pkg. (8oz each) Philadelphia neufchatel cheese 1/3 less fat then cream cheese, softened
  • 2 Tbsp. milk
  • 1 cup thawed cool whip lite whipped topping
  • 2 cups boiling water
  • 1 pkg. (8-serving size) jello strawberry flavor sugar free low calorie gelatin
  • 2 cans (8-1/4 oz each) mandarin orange segments, drained

Preparation

Step 1

MIX graham crumbs, 1/4 cup sugar and butter; press onto bottom of 13x9-inch pan.

BEAT Neufchatel, remaining sugar and milk with whisk until well blended. Stir in COOL WHIP; spread over crust. Refrigerate until ready to use.

MEANWHILE: add boiling water to gelatin mix in large bowl; Refrigerate 1-1/2 hours or until thickened. Stir in oranges. Spoon over Neufchatel layer.

REFRIGERATE 3 hours or until firm. Cut into squares. I sometimes add another dollop of whipped topping to garnish when serving.
