Tomato Bruschetta

  • 10 large basil leaves
  • 2 cups Roma tomatoes seeded and chopped
  • 2 tbsp. balsamic vinegar
  • 1/2 cup olive oil
  • 2 cloves minced garlic
  • 1 loaf French baguette
  • Parmesan for garnish



Step 1

1. heat oven to 425
2. chop basil leaves into small pieces. Add to chopped tomatoes. Mix in balsamic vinegar, olive oil and garlic
3. slice baguette and brush lightly with olive oil on one side. Place on baking sheet and bake 6-8 minutes until golden brown. Spoon bruschetta mixture over bread pieces, sprinkle with fresh parmesan and serve.
