Ingredients

  • 3 ounces country ham finely diced
  • 4 oz. goat cheese, softened
  • 1 tbsp. finely chopped fresh sage
  • 1 tbsp. freshly squeezed lemon juice
  • 1/8 tsp. ground black pepper
  • 4 boneless chicken breasts, skin on
  • 1 tbsp. olive oil

Step 1

Preheat oven to 425 degrees. Heat small frying pan over medium heat. Add the ham and cook for 4-5 minutes or until slightly browned.
Meanwhile, combine the goat cheese and sage in small bowl. Remove the skillet from the heat and add the lemon juice to the pan. Scrape up any browned bits from the bottom of the pan with a wooden spoon or spatula. Add the ham and drippings to the goat cheese and stir in the pepper.
Place chicken breasts on a rimmed baking sheet. Stuff an even amount of the goat cheese mixture under the skin of each breast. Rub the olive oil on top of the skin of each breast.
Bake at 425 degrees for 25 minutes or until the skin is browned.
