Ingredients
- Pulled Meat from Whole Roasted Chicken
- 3-4 Avocados (ripe)
- 1/4 of a red onion, sliced thinly
- 1 jalapeno, seeded, sliced thinly
- 1/4 cup chopped cilantro
- Juice of 3 limes (to taste)
- Salt
- Flour tortillas & pitas - optional
Preparation
Step 1
Remove chicken from bones shred into bite size pieces.
Remove skin and seed from Avocado and place flesh (green part) into a bowl. Smash with fork or potato masher until soft.
Stir in chicken, red onion, jalapeno, cilantro and lime juice from 2 limes.
Season with salt, and add more lime juice if necessary.
Serve in tortilla or pita pocket.
