Ingredients

  • 1 lb macaroni elbows
  • 2 tbls unsalted butter
  • 2 tbls flour
  • 2 cups milk
  • 2 tbls egg wash
  • 1 lb grated white sharp cheddar
  • 1 lb grated smoked Gouda
  • salt and ground pepper
  • 2 lg eggs
  • 3 cups Panko
  • peanut oil

Preparation

Step 1

!. Cook macaroni drain and set aside.

2. Melt butter over med heat, stir in flour and paprika to form rue.

3. Whisk in warmed milk, cook until smooth.

4. Remove from heat and add cheeses whisk until melted and smooth.

5. Add macaroni.

6. Put in a shallow greased pan and refigerate for 2 hours.

7. Shape mac n cheese into meatball sized balls and place on waxed paper overnight in freezer.

8. Beat 2 eggs and 2 tbls milk together for wash.

9. Dip the frozen balls into the egg wash then panko then repeat.

10. Re-freeze until ready to use.

11. Heat oil to 350 degrees, deep fry balls for about 5 minutes until golden brown.
