Ingredients
- 3/4 Cup all-purpose flour
- 3/4 Cup whole-wheat flour
- 3 Tablespoons sugar
- 1 Tablespoon baking powder
- 1/2 Teaspoon salt
- 1 1/4 Cup milk
- 1/2 stick melted butter
- 2 Eggs
- A dash of vanilla
Preparation
Step 1
Whisk together dry ingredients and set aside.
Whisk together wet ingredients then whisk into dry ingredients until just combined.
Ladle 1/4 cup of batter onto a hot buttered skillet and cook until bubbly. Flip and cook until golden on the bottom.
Variations:
Corn Cakes: Replace 1 cup of flour with 1 cup yellow cornmeal.
Oat Pancakes: Replace 3/4 cup whole wheat flour with 1/2 cup ground oats and 1/4 cup wheat germ.
Buttermilk: Replace milk with buttermilk, reduce baking powder to 1 teaspoon, add 1/2 teaspoon baking soda.
