CHERRY APPLE STRUDEL

Ingredients

  • 2 lge Golden Delicious Apples
  • 1 16 0z can Tart Pie Cherries, well drained
  • 2 tbsps Chopped dry Cherries
  • 1/3 cup finely chopped toasted Almonds
  • 2/3 cup Sugar
  • 1 tsp. Cinnamon
  • few drops Almond Extract
  • 3 tbsp. Sugar
  • 1 tsp. Cinnamon
  • 12 Sheets Filo Dough
  • 2/3 Cups Unsalted Butter or Margarine Melted
  • Confectioners Sugar

Preparation

Step 1

Peel core & slice apples ⅛ in. thick.
In bowl combine
apples & cherries, ⅓ cup of almonds, sugar cinnamon &
almond extract.
In a separate bowl, combine ¾ cup almonds, sugar & cinnamon.
Place Filo on a lge sheet of waxed paper over a slight dampened towel.
Remove 1 sheet of filo, then
roll remaining filo in the dampened towel to keep moist.
Brush filo sheet lightly on one side with melted butter.
Place butter side up on baking sheet lined with foil.
Sprinkle with cinnamon-nut mixture. Repeat layers, using half the filo. Spread half the filling over bottom third of pastry, leaving 1 ½” border.
Discard liquid in bowl.
Fold narrow ends of filo over filling. Using foil as an aid, roll up tightly. Place seam side down on jelly roll pan.
Brush top with Butter.
Repeat for second strudel.
Bake at 375 degrees 30 to 35 mins. until golden brown.
Let cool on pan for 5 mins. then cool on rack 10 mins.
Dust with confectioners Sugar.
Serve Warm, cut in 1 ½ in. diagonal slices.
Makes 2 strudel, 8 to 9 pieces each.
