Ingredients
- 1 medium cauliflower
- 6 Tbsp. vegetable oil
- 1 tsp. mustard seeds
- 1 tsp. ground cumin
- 1 tsp. garam masala
- 1 tsp. turmeric
- 1 tsp. minced garlic
- 1 medium onion, halved and sliced
- 1/2 tsp. chili flakes
- 1/3 cup vegetable stock
- 2 Tbsp. chopped cilantro

Step 1
Break the cauliflower into small florets.
Heat the oil in a deep frying pan. Cover the pan and heat the mustard seeds and cook until they start to pop.
Stir in the remaining spices, the garlic, onion and the chilies and cook for 2 or 3 minutes.
Add the cauliflower, vegetable stock, and cilantro and cook, covered, over gentle heat for 15 minutes or until the cauliflower is tender.
Uncover the pan and boil for 1 minute to thicken the juices.
