Ingredients

  • 1 lb small red potatoes, scrubbed
  • 1/2 lb green beans
  • 4 (5oz) arctic char fillets
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 TBSP reduced sodium chicken broth (gf)
  • 2 tsp red wine vinegar
  • 2 tsp evoo
  • 1 shallot, minced
  • 1 tsp dijon
  • 4 Boston lettuce leaves
  • 1/2 cup cherry tomatoes, halved
  • 8 nicoise olives

Preparation

Step 1

Put potatoes in large saucepan and add enough cold water to cover; bring to boil. Reduce heat and simmer until tender, about 20 min. Drain and reserve water. When potatoes are cool enough to handle halve and slice.

REturn water to boil. Add grean beans and cook until tender, about 4 min. Drain, then rinse under cold water.

Spray grill rack with olive oit nonstick spray. Preheat grill to med high or prepare med high fire using direct method.

Sprinkle arctic char with salt and pepper; lightly spray with nonstick spray. Place fish on grill rack and grill until just opaque in center; about 4 min per side. Transfer fish to cutting board

To make dressing, whisk together broth, vinegar, iol, shallot, and mustard in small bowl. Place arctic char on platter and serve along with potatoes, green beans, tomatoes, lettuce, olives and dressing. Discard skin before eating.
