Ingredients

  • 2 Cans (each 28oz./796ml) chopped tomatoes
  • 2 Roasted Sweet Red Peppers, seeded
  • 1/4 C. Vegetable Stock
  • 2 Tbsp. Sugar
  • Salt & Pepper to taste
  • 1/4 C. 35% Cream
  • 3 Tbsp. Butter, cubed
  • 1 Tbsp. Chopped Fresh Basil, for garnish

Preparation

Step 1

In a food processor, puree tomatoes & peppers. Pour into a saucepan & add stock, sugar & salt & pepper. Bring to a boil. Reduce heat & simmer for 15-20 min, till slightly thickened. Stir in cream. Remove from heat & gradually add in butter, a piece at a time. Serve garnished with basil.
