Creamy Winter Tomato Soup

Ingredients
- 2 Cans (each 28oz./796ml) chopped tomatoes
- 2 Roasted Sweet Red Peppers, seeded
- 1/4 C. Vegetable Stock
- 2 Tbsp. Sugar
- Salt & Pepper to taste
- 1/4 C. 35% Cream
- 3 Tbsp. Butter, cubed
- 1 Tbsp. Chopped Fresh Basil, for garnish

Preparation
Step 1
In a food processor, puree tomatoes & peppers. Pour into a saucepan & add stock, sugar & salt & pepper. Bring to a boil. Reduce heat & simmer for 15-20 min, till slightly thickened. Stir in cream. Remove from heat & gradually add in butter, a piece at a time. Serve garnished with basil.
